Veal

Our eldest son, Luke, is in charge of our veal program. These are newborn calves that receive whole milk from goats that Luke milks by hand. The goat’s sole diet is pasture (unless they get out and eat mom’s flowers - ooops! The calves stay healthy on pasture and goat’s milk and do not receive any antibiotics or hormones. These calves are harvested in late summer and are so very tender!

Rabbits

Luke also raises rabbits. He goes through great effort to see that his rabbits receive green plants (hopefully not from our garden). These are also seasonally harvested to gain full health benefits. They are more flavorful than traditional rabbits.

Ducks

The ducks round out our farm by not only helping our watchdog, but by assisting in the control of the local insect population. They graze around our house and barn without tearing up the flower beds as the hens so often do. Their eggs are visibly different as well. The eggs can be picked up at our farm during the summer when the ducks are laying. Harvested ducks are processed at the end of the summer once they have matured.
